Second Course - Farm fresh greens with White Silo Upland Rose vinaigrette
Third Course - Blackberry Rosemary glazed short ribs with butternut squash puree and White Silo's very own fresh asparagus
Fourth Course - Dark chocolate pot de creme laced with cassis wine and topped with strawberry whipped cream

March 4th - South American Wine Dinner at The Silo 6:00-9:00pm. 
South American Food & Wine Pairing Dinner– This past year’s Olympics inspired Chef Anne McClelland, of The First Bite, to put together this gold medal menu. South America offers fabulous cuisine and wines that we are excited to share with you!

First Course Argentine Lentil Soup with Pao de Queijo - This savory lentil and vegetable soup is a great first event paired with Brazilian garlic cheesy bread.
Second Course Brazilian Chicken with Coconut Milk– Tender chicken immersed in flavorful coconut broth accompanied by cilantro-lime rice.
Third Course Latin Spiced Crispy Pork Belly with Corn Puree garnished with pea shoots.
Fourth Course Grilled Rib Eye with Chimichurri Sauce and Tostones – This bright and zingy blend of herbs enhances succulent rib eye steak served over an arugula salad and accompanied by tostones (fried plantains).
The Finish Line - Cinnamon Churros with chocolate chili dolce de leche – Tender, flaky churros with a side of sassy dolce de leche.

November 5th - Farm to Table Harvest Dinner at Sport Hill Farm, Easton, CT 6:00-9:00pm.  Opener: Sport Hill Farm Tomato Soup with Arethusa Camembert Crostini, Salad:  Fresh SHF greens, goat cheese, pomegranate seeds, roasted pumpkin seeds in an apple cider vinaigrette, Entrée:  Succulent braised beef short ribs married with a combination of quinoa, brussels sprouts, delicata squash finished with a butternut squash sauce and frizzled leeks; Dessert:  Druken apple filled Beggars Purses enrobed in a maple salted caramel sauce.
